- 1 Small bag of raw black beans
- 2 spring onions
- 5 Cloves of garlic
- Sea salt to taste
- Wash raw black beans and spring onions.
- Add 10 cups of water and all the ingredients into the crock pot.
- Cook on high till beans are soft.
1 Box of penne pasta
1 Jar of “Senora Dixie Salsa” (your choice of Mild, Medium, Hot)
2 Medium zucchinis – chopped in small slices
1/4 Cup olive oil
1 Bunch of Broccoli florets
Salt & Pepper to taste
4 Cloves garlic finely chopped
Boil pasta till “Al dente.” – (Not over cooked)
In a frying pan, add olive oil and garlic.
Fry garlic till lightly brown then add zucchini and broccoli.
Fry for 3 minutes, set aside to cool.
Put all ingredients in Pyrex and serve.
