This meal is perfect for breakfast accompanied by Senora Dixie Salsa and sour cream
Ingredients
Ingredient to Garnish: – 3 Eggs
  • Senora Dixie Salsa
  • 12 Tortillas cut into strips
  • 2 tsp. Olive Oil
  • 8 Tbsp. Chopped Fresh Cilantro
  • 3 Scallions, finely chopped
  • 2 Medium Tomatoes finely chopped
  • tsp. Garlic Powder
  • tsp. Chili Pepper
  • Salt and Pepper to flavor

Instructions
  1. Place the tortilla strips in a frying pan
  2. Toss with Olive Oil
  3. stir until they are golden brown
  4. Add the Scallions, Tomatoes, Fresh Cilantro
  5. Stir occasionally for 3 (three) minutes
  6. Add the Eggs, Garlic Powder, Chili Pepper, Salt, and Pepper
  7. Stir till everything is blended and eggs are cooked
